Holiday Breakfast: Pumpkin Scotch Cakes

The Holidays are not just for dinner and desserts. Here’s a simple recipe to enjoy a delicious, holiday seasoned brunch.

  • 2 cups AP flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp salt
  • 1 Tbs sugar
  • 1 tsp pumpkin pie spice
  • 2 egg yolks
  • 2 cups buttermilk
  • 4 Tbs melted butter
  • 7 oz pumpkin
  • 4 egg whites

Heat the griddle to 350 degrees F. In one bowl combine the flour, baking powder, baking soda, salt, sugar and pumpkin pie spice.  Combine the egg yolks, butter and buttermilk then add to dry ingredients. Add the pumpkin. Whip the egg whites to soft peaks; add 1/3 to the batter to lighten it. Then fold in the remaining whites. Place on the griddle and finish cooking.

@Jen: I do not think this will work with bread machine, but it worked well in stand mixer with dough hook.
