Basic Bread Dough

  • 1 packet yeast
  • Pinch (1/2 tsp) sugar
  • 1/3 cup hot water
  • 16 oz bread flour
  • 1 tbsp whole wheat flour
  • 1 cup cold water
  • 2 tsp salt

 

Read the directions for proper temperature to bloom yeast. Place hot water at proper temperature with sugar in a bowl with yeast and allow to bloom for 5 minutes. Place all other ingredients in a bowl of a stand mixer. Add the bloomed yeast and mix with dough hook (or knead by hand).

Allow to rise covered in warm place for 1-2 hours, until 11/2 to doubled in size. Punch down, recover and allow to rise 2-3 times in size. Place into desired form and bake.
