Mediterranean marinade: This is a delightful marinade that is equally at home for chicken or flavorful fish like salmon. The marinade can also be reduced in a hot pan and drizzled over the meat for a fantastic pan sauce. Remember, don’t use any wine in cooking that you would not drink.
- ½ cup olive oil
- 1 sprig each fresh rosemary, oregano, thyme, basil
- 1 tbsp chopped red onion
- 1 crushed garlic clove
- Juice 1 lemon
- 1 tsp hot sauce
- 1 cup white wine
- 2 tsp salt
- 1 tsp fresh ground black pepper
Combine all ingredients and whisk together. Marinade may be stored several days in the refrigerator.
