This is a basic pickling recipe and can be used for any number of vegetables.
- 1 cup apple cider vinegar
- 1/2 cup rice wine vinegar
- 2 tbsp pickling spice
- 2 tbsp sugar
- 1 tbsp salt
- 1 cayenne or similar pepper split lengthwise
- 8 baby beets (about 1 pound) cooked and peeled
Place all the spices with the vinegars in a medium saucepan. Bring to a boil to dissolve the salt and sugar. Remove from heat and bring to room temperature. Place the beets in sealable container (you may slice or place in whole) and cover with pickling liquid. Refrigerate overnight.
