Roasted Corn and Cilantro-Lime Butter

Roasted Corn and Cilantro-Lime Butter: This is a very simple dish and very versatile. Do not let that fool you. This recipe is another “basic”. Perfect grilling and roasting all different kinds of veggies; here we use corn on the grill. I like to use a healthy alternative when making the compound butter. I have found smart balance works well, and you can get it with additional omega-3s and it doesn’t seem to detract from the taste, especially when you add additional flavors. Cilantro, lime and corn are a classic flavor profile, but feel free to vary. These butters are great ways to add secondary, subtle flavors to meals and really elevate the entire dish. They are easy to make and can be made ahead and frozen for several months as well.

Roasted Corn and Cilantro-Lime Butter

  • As many ears of corn as guests, allowing 1 ear per person
  • 8oz smart balance, butter or other butter substitute
  • 2 tbsp chopped cilantro
  • 1 tbsp lime juice

Allow the butter or butter substitute to soften to room temperature. Using a wooden spoon or electric mixer, cream the butter. Mix in the lime juice and cilantro. Place in some cling wrap. If you have a bamboo mat (used for rolling sushi), place the cling wrap over the mat. Roll the cling wrap over the butter mixture to form an even log, about 1 inch in thickness. Twist off the ends to seal and refrigerate until needed.
