Doc’s Piri-Piri Sauce

  • 20-25 hot red chilies (make sure they are red to get the right color)
  • 1 cup olive oil
  • 2 roasted jalapeños
  • 1 roasted poblano
  • 1 roasted red bell pepper
  • ¼ cup cider vinegar
  • ¼ cup lemon juice
  • 3 tbsp (about 5 cloves) chopped garlic
  • 1 tbsp paprika
  • 1 tsp salt
  • 1 tsp fresh ground black pepper

Heat the oil over medium heat, add the red chilies and cook for 5-10 minutes. Let cool. Once the other peppers have roasted, remove the skins and combine with all the other ingredients. Add to the cooled olive oil and chilies and blend with immersion blender or in small batches in a food processor or blender until smooth.
