Basic Hummus

  • 2 garlic cloves, roasted and chopped
  • 1 bag (16 oz) of dried chick peas reconstituted or 2 cans (15.5 oz) drained
  • 1 cup vegetable nage (use if reconstituting dried chick peas)
  •  1 cup water (use if reconstituting dried chick peas)
  • 1 cup sesame tahini (about one 1-12 oz can)
  • 1 tsp salt Juice of 1 lemon
  • ½ cup good quality olive oil
  • ½ cup water
  •  ¼ cup fresh flat leaf parsley, finely chopped
  • ¼ cup cilantro, finely chopped

Reconstitute the chick peas with 1 cup of the vegetable nage mixed with 1 cup of water. Add the garlic, salt, tahini, lemon juice to a food processor and puree along with the olive oil. Continue pureeing slowly adding part of all of the water until the desired consistency is achieved (I like it about creamy porridge consistency). Fold in the parsley and cilantro.
